Curried Beef Stew
Servings: 4
1 pkg of four beef shanks
1 small cans tomato paste
1 small cans tomato sauce
10 sprigs of fresh thyme
4 bay leaves
3 tbsp curry powder
2 tbsp hot paprikas
2 carrots, peeled and sliced
4 celery stalks rough chop
2 whole large onions rough chop
1½ whole heads fresh garlic finely chopped
Enough water to cover all ingredients
8 yukon gold potatoes quartered
1 tbsp salt
1 tbsp pepper
Season beef well with salt, pepper, & hot paprika. Sear beef in olive oil then remove. Add vegetables, herbs, and seasoning. Saute until aromatic. Add tomato paste and tomato sauce. Add curry powder add water then place beef back in pot and place in oven at 280 degress till tender. Add potatoes towards the end.
