Thai crispy pork

 

1 lb pork belly sliced thick

4 cloves fresh garlic, sliced razor thin for frying

1 bunch broccoli raab blanched and set aside

 cooking liquid for pork

1 gal of water

½ cup of cane vinegar (dati puti)

2 tbsp black soy sauce

1 tbsp regular soy sauce

2 tbsp palm sugar

Bring to a boil then reduce to a simmer than add pork belly. Cook till tender and done.

 

FOR THE SAUCE

1 tbsp black soy sauce

1 tbsp regular soy sauce

½ tsp shrimp sauce

1 tsp chicken stock

1 tsp catsup

1 tbsp oyster sauce

1 tbsp corn starch & 1 tbsp water for slurry

1 tsp palm sugar

 

Dry pork belly then deep fry until crispy. In a pan heat oil and add broccoli followed by the pork. Now add the sauce and mix, heat through and serve with rice.
