Kusshi Oysters

On April 1, 2014 we had the pleasure of catering an event for 20 people.  It was a full service event in the Las Vegas area held at a private residence. The menu consisted of a variety of hors d’oeuvres such as:

• Crustinis with Foie Gras mousse and herbed pear jam
• Poached apple asparagus and goat cheese salad with candied almonds and mango dill emulsion
• Tuna tar-tar with shaved fennel and parmesan cheese on a butter lettuce
• Lettuce wraps with seared filet mignon, carrots and scallion with sesame oil, salt and pepper.

Our favorite was the Kusshi Oysters (pictured below) which was dressed in soy mirin and topped with wasabi tobiko and micro wasabi greens.

If you like oysters, then you’ll love Kusshi Oysters.  Kusshi means “precious” in Japanese.  It’s very popular in the west coast.  Kusshi’s are small in size and are well known for their ultra-clean taste as it is creamy as well as soft in texture.
