Roasted Jalapeno Emulsion

 

Jalapeno to taste

4 cloves garlic

1 tbsp finely diced shallots

2 tbsp cilantro

1 egg yolk

1 tbsp fresh lemon juice

1 tbsp dati puti cane vinegar

3 tbsp vegetable oil

Pinch of salt and pepper

 

Roast jalapenos on fire. Remove and add to blender with remaining ingredients. Drip in vegetable oil till fully emulsified and to dressing consistency.
