Apple Asparagus and Goat Cheese Salad

  • 1 whole Granny Smith apple
  • 1 small package of goat cheese
  • 1 bunch of asparagus
  • 1/2 a cup of pumpkin seeds
  • 1/2 cup sugar
  • 1/2 cup of water
  • Pinch of cayenne pepper
  • 1 bottle of port wine
  • Olive oil
  • 1 shallot
  • Orang champaigne vinegar
  • 1 egg yolk
  • 1/2 a mango
  • 1/2 tsp of fresh thyme
  • Heavy cream
  • 1 bunch of cilantro
  • 1 cup of canola oil

 

Small dice the apples then poach in port wine until tender but not to soft remove and reserve. In a small non stick pan combine the sugar and water and begin to cook stir and dissolve, once the liquid starts having a brownish tint add the pumpkin seed stirring constantly. Once the liquid has turned a caramel color remove and place on silpat to cool. Combine the goat cheese with about 1 tbsp of heavy cream, fresh chopped thyme, and shallots. Blanch asparagus until aldente shock in ice water. For the dressing place egg yolk, vinegar, shallot, mango, and cilantro in a blender pulse a few times the start adding the oil drop by drop until you have formed a stable emulsion. Once you have completed all the components of the salad arrange in any way you want. Enjoy the salad as apart of catered dinner event or just at home with your family.
