Seared Tuna with Wasabi Mayo

Ingredients:

  • 4 oz. Fresh Ahi Tuna
  • 3 oz. Panko Bread Crumbs
  • 1/2 tsp. of salt and pepper
  • slice of wheat bread

Mayo:

  • 2 tea spoons of wasabi paste
  • 4 teaspoons of mayonnaise

Vinaigrette:

  • 2 Fresh Kiwi
  • 1 Shallot
  • 1 Garlic Clove
  • 1 oz. White Wine Vinegar
  • 3 oz. extra virgin olive oil
  • 1/2 tea spoon of salt and pepper

Instructions:

For Tuna:

  • Season the tuna with salt and pepper on both sides - Coat tuna thoroughly with Panko Bread Crumbs then set aside - Heat pan with olive oil add tuna and sear on both sides for approximately 3 minutes on both sides

For Mayo:

  • Combine 2 tea spoons of wasabi paste and 4 teaspoons of mayonnaise, mix thoroughly and set aside

For Vinaigrette:

  • Peel Kiwis put in blender with white wine vinegar, shallot, garlic, salt and pepper - Puret until smooth and slowly add 3 oz. of olive oil until dressing like consistency

For Bread:

  • Cut off corners and size to tuna
  • Grill with butter until toasted

For Plating:

  • A Dallop of the Mayo on the center of the plate
  • Place Bread on top followed by the tuna
  • Add fresh greens for garnish above the tuna
  • Make design with the Vinaigrette
