It’s 5pm and you’re asking yourself, What’s for dinner?

Or try omelets filled with a couple slices of your choice of cheese — and you’re good. Or go international. Try a Greek version with spinach and feta or an Italian version with mozzarella, pesto and tomatoes. The possibilities are endless.

Have leftover tortillas on hand? Simply scramble eggs with sausage, veggies and perhaps some black beans and salsa. Spoon onto the tortilla, roll up and you have a hearty burrito that makes for an easy hand-held dinner.

A great way to use up your leftover pasta or cooked potatoes is to mix up a frittata. This classic brunch dish starts with an egg, milk, and cheese mixture with added bits of ham or sausage. Cook it in a pan on the stovetop and then finish in the oven until the filling is set and the top is browned. Cut into wedges and serve with melon slices for a simply delicious supper.

Want to go sweet? Pull out the waffle iron and make some homemade waffles for a real treat. Pork sausage and applesauce are classic accompaniments or go savory and add chicken tenders with a drizzle of maple syrup. Ahhhh. Comfort food at its finest.
