You might think of fusion cuisine as the mashup of the culinary world. It started to get press only about 25 years ago when Wolfgang Puck woke up our taste buds mixing multiethnic themes in surprising, satisfying ways. In doing so, he reimagined our culinary options with unexpected dishes like buffalo chicken spring rolls and BBQ nachos.
But honestly, borrowing food and flavors from one culture to benefit another has been around for a long, long time. Truth is, spaghetti wouldn’t have made it onto the table if Italians hadn’t borrowed the invention from the Chinese. And that was just the beginning.
At Matteo Gourmet, some of our favorite combos are clean and light Asian ingredients that are the perfect backdrop to the burst of flavor of Mexican elements. Think Asada marinated lamb chop with southwestern Kim chi fried rice. Or Deconstructed Ahi Roll featuring ahi with truffle oil and parmesan cheese sprinkled with a soy-mirin dressing.
